Description

A quick and flavorful Air Fryer Chicken Fajitas recipe featuring tender chicken strips and colorful bell peppers cooked to perfection in the air fryer, perfect for a healthy and delicious meal served with warm tortillas and your favorite toppings.

Ingredients

Scale

Protein and Vegetables

  • 2 large chicken breasts cut into ¼-inch thick strips
  • ½ large red bell pepper cut into ¼-inch thick strips
  • ½ large green bell pepper cut into ¼-inch thick strips
  • 1 large red onion cut into ¼-inch thick strips

Seasoning and Oil

  • 2 tablespoons olive oil
  • 1 ounce packet of fajita seasoning (2 tablespoons if using homemade)

Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 400 degrees F. If your air fryer doesn’t have a preheat function, set it to 400 degrees F and let it run for 4-5 minutes before adding the fajitas.
  2. Prepare Ingredients: Add the chicken strips, red and green bell peppers, and red onion slices to a large bowl and drizzle with the olive oil.
  3. Season: Sprinkle the fajita seasoning evenly over the chicken and vegetables, then toss everything together until well combined and evenly coated.
  4. Air Fry: Transfer the seasoned chicken and vegetables to the preheated air fryer basket. Cook for 14 minutes, stirring well halfway through the cooking time, or until the chicken reaches an internal temperature of 165 degrees F.
  5. Serve: Serve the hot fajita mixture in warm tortillas topped with your favorite garnishes such as sour cream, guacamole, or salsa.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to three months.
  • Freezing cooked fajitas is not recommended as the texture of the vegetables becomes mushy when thawed.
  • Reheat leftovers in a 350 degree air fryer for 3-4 minutes or in the microwave for 2-3 minutes.
  • Cooking time may vary depending on your air fryer model and the thickness of chicken strips; always check that chicken reaches 165 degrees F.
  • Cut chicken and vegetables to the same size and thickness to ensure even cooking.
  • A packet of taco seasoning can substitute the fajita seasoning if needed.
