Description

Crispy and delicious Air Fryer Zucchini Fries coated in Italian-seasoned flour, egg, and Parmesan breadcrumb mixture, perfect for a healthy appetizer or snack.

Zucchini Fries

  • 2 medium zucchini, cut into 3 inch x 1/2 inch sticks
  • ½ cup all-purpose flour
  • 2 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 large eggs
  • 1 tbsp water
  • ½ cup Italian breadcrumbs or panko breadcrumbs
  • ⅓ cup Parmesan cheese, finely grated

Instructions

  1. Prepare zucchini: Slice your zucchini into 3 inch pieces, about the size of a french fry, to ensure even cooking and crispiness.
  2. Mix dry coating: In a large bowl, combine all-purpose flour, Italian seasoning, salt, and pepper thoroughly.
  3. Whisk egg wash: In a medium bowl, whisk together the eggs and water until the mixture is an even pale yellow color.
  4. Combine breadcrumb mixture: In another bowl, stir together the Italian breadcrumbs and finely grated Parmesan cheese.
  5. Coat zucchini: Toss the zucchini sticks in the flour mixture to coat evenly, shaking off excess flour. Dip them in the egg wash, then coat thoroughly in the breadcrumb and Parmesan mixture.
  6. Arrange in air fryer: Spritz the bottom of the air fryer basket with cooking spray. Place the coated zucchini in a single even layer, ensuring they do not touch, then spritz the tops with cooking spray.
  7. Air fry zucchini fries: Cook at 385 degrees Fahrenheit for 10 minutes until golden brown and crispy. Serve immediately with your favorite dipping sauce if desired.

Notes

  • Freezing is not recommended as zucchini fries contain high water content and will become soggy upon thawing.
  • For baking, place a cooling rack inside a baking sheet to allow air circulation underneath, spritz fries with olive oil spray, and bake at 425 degrees Fahrenheit for 22 minutes until golden and crispy.
