- 12 oz. lasagna noodles
Filling
- 15 oz. whole milk ricotta cheese
- 2 cups shredded mozzarella cheese, divided
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 tsp salt
- 1/4 tsp freshly cracked black pepper
- 10 oz. frozen spinach, thawed and drained

- 1 24 oz. jar pasta sauce
Instructions
- Preheat and boil noodles. Preheat the oven to 400 degrees Fahrenheit. Bring a large pot of water to a boil over high heat. Add 1 teaspoon salt to season the water, then add the lasagna noodles. Boil until just al dente, being careful not to overcook so noodles remain firm enough to roll. Drain noodles in a colander and let cool until safe to handle.
- Prepare the filling. Squeeze excess water from thawed spinach thoroughly. In a bowl, combine spinach, ricotta cheese, 1 cup shredded mozzarella, grated Parmesan, egg, salt, and freshly cracked black pepper. Stir until mixture is evenly combined.
- Assemble the roll ups. Lay cooked noodles flat on a clean surface. Spread approximately 1/4 cup of the spinach and cheese filling over each noodle from edge to edge. Roll each noodle tightly and place seam side down in a large casserole dish. Repeat with remaining noodles and filling, aiming for about 16 roll ups. Save any extra noodles as backups in case any tear during rolling.
- Add sauce and top cheese. Pour the entire jar of pasta sauce evenly over the rolled noodles in the casserole dish. Sprinkle the remaining 1 cup shredded mozzarella cheese over the top of the sauce.
- Bake. Cover casserole dish with foil and bake in the preheated oven for 30 minutes until cheese is melted and sauce is bubbling. Serve hot and enjoy.
