These Chipotle Cheddar BBQ Chicken Sliders combine tender shredded chicken tossed in smoky barbecue sauce, topped with melted cheddar cheese and a spicy chipotle mayo, all nestled inside sweet Hawaiian rolls toasted to perfection. BBQ Chicken

  • 2 cups shredded boneless skinless chicken breast
  • 1 cup barbecue sauce

Chipotle Mayo

  • 1/4 cup mayonnaise
  • 1 chipotle pepper in adobo sauce
  • 1/2 teaspoon sweet paprika
  • 1 clove garlic, finely minced or crushed
  • 1/2 tablespoon chopped cilantro
  • pinch of salt

Sliders

  • 12 count Hawaiian sweet rolls
  • 12 slices cheddar cheese (orange)
  • 1/3 cup thinly sliced red onion
  • 1 tablespoon melted butter, plus more for serving
  • chopped parsley and chives, for serving


Instructions

  1. Prep and Toast the Rolls: Turn the oven to low broil. Slice the Hawaiian rolls in half and place them cut side up on a lined baking sheet. Toast the halves carefully until they are golden brown and toasted. Remove from the oven and lower the oven temperature to 350 degrees Fahrenheit.
  2. Make the Barbecue Chicken: In a mixing bowl, combine the shredded chicken breast and barbecue sauce. Stir well until the chicken is evenly coated with the sauce.
  3. Make the Chipotle Mayo: Add the mayonnaise, chipotle pepper in adobo sauce, sweet paprika, minced garlic, chopped cilantro, and a pinch of salt to a food processor or blender. Blend until smooth and well combined, then transfer to a small bowl.
  4. Assemble the Sliders: Brush the chipotle mayo generously on both sides of each toasted roll. On the bottom halves, place 6 slices of cheddar cheese evenly. Layer the barbecue chicken over the cheese, then add the thinly sliced red onion on top of the chicken. Place the remaining 6 slices of cheese over the onions, then cover with the top halves of the rolls.
  5. Bake the Sliders: Brush melted butter over the tops of the assembled sliders. Cover the sheet pan with aluminum foil and bake in the preheated 350 degrees Fahrenheit oven for 10 minutes.
  6. Finish Baking: Remove the foil and continue baking for an additional 15 minutes until the cheddar cheese is fully melted and the rolls are golden brown and toasted on top.
  7. Garnish and Serve: Remove the sliders from the oven, sprinkle with chopped parsley and chives, then cut into individual sliders and serve warm.

Notes

  • Use leftover rotisserie chicken to save time for the shredded chicken if preferred.
  • If you don’t have a food processor, finely mince the chipotle pepper and garlic, then mix all chipotle mayo ingredients by hand.
  • Adjust the amount of chipotle pepper in the mayo according to desired spice level.
  • For extra flavor, consider adding pickles or coleslaw inside the sliders before serving.
