Description

Instructions

  1. Prepare the dish: Line a small, flat dish (about 13 x 18 cm) with non-stick baking paper for easy removal of the truffle mixture.
  2. Heat the cream and zest: Pour the cream and add the orange zest to a small saucepan. Heat over low heat until the cream is just below boiling point, then remove from heat.
  3. Melt the chocolate: Add the finely chopped dark chocolate to the hot cream. Stir continuously until the chocolate has fully melted and the mixture becomes smooth and glossy.
  4. Chill the mixture: Pour the chocolate mixture into the prepared dish. Transfer to the refrigerator and chill for about 2 hours, or until firm enough to roll.
  5. Prepare coating: While chilling, add chocolate sprinkles to a small bowl and set aside. Line a baking tray with non-stick baking paper for finished truffles.
  6. Shape the truffles: Using a small ice cream scoop or teaspoons, scoop about 3 level teaspoons of chilled mixture. Roll each into a compact small ball. If too firm, let sit at room temperature for 5-10 minutes to soften slightly.
  7. Coat the truffles: Roll each ball in the chocolate sprinkles to coat evenly. Use the bowl to move the sprinkles for better coverage. Place coated truffles on the prepared baking tray.
  8. Final chilling: Refrigerate the coated truffles for at least 30 minutes until firm before serving or storing.
  9. Store properly: Keep truffles in an airtight container in the refrigerator for up to one week. Separate layers with non-stick baking paper to prevent sticking.

  • For best flavor and texture, use full-fat cream with at least 35% fat content.
  • Dark chocolate with 40% cocoa solids is ideal; higher percentages will increase bitterness.
