Description

Delicious Country Ranch Potatoes with Green Beans combine tender Yukon gold potatoes, fresh green beans, and crispy bacon, all seasoned with savory ranch spices for a flavorful American side dish perfect for any meal.

Ingredients

Scale

Vegetables

  • 1 lb. green beans, fresh, trimmed
  • 1 ½ lbs. Yukon gold potatoes, baby, cut in half

Meat

  • 12 oz bacon, thick cut

Seasonings & Fats

  • 4 tbsp butter
  • 2 ½ tbsp ranch seasoning
  • 1 tsp garlic powder
  • salt and pepper, to taste

Instructions

  1. Boil green beans: Bring a medium pot of water to a boil, add the green beans and cook until bright green and tender, about 5 minutes. Remove with a slotted spoon and place in ice water to stop cooking.
  2. Cook potatoes: After removing the green beans, add the potatoes to the boiling water and cook until fork tender, about 10 minutes. Drain carefully once done.
  3. Cook bacon: While potatoes cook, heat a large skillet over medium-high heat and cook bacon pieces until browned and crispy, then remove with a slotted spoon and set aside on a paper towel-lined plate.
  4. Brown potatoes: Add the drained potatoes to the skillet with bacon drippings. Stir frequently, browning the potatoes evenly on all sides over medium-high heat.
  5. Combine and season: Reduce heat to medium, add butter, green beans, ranch seasoning, and garlic powder. Stir well to coat everything evenly.
  6. Finish with bacon and seasoning: Add the cooked bacon back into the skillet and season with salt and pepper to taste. Stir gently, then serve hot and enjoy your side dish.

Notes

  • Use baby Yukon gold potatoes for a creamy texture and quick cooking.
  • To reduce sodium, use low-sodium bacon and adjust seasoning accordingly.
  • If ranch seasoning is unavailable, substitute with a mix of dried dill, parsley, and onion powder.
  • Blanch green beans briefly in boiling water then ice water to keep their vibrant color and crispness.
  • For a dairy-free version, substitute butter with olive oil or a plant-based alternative.
