Ingredients
Scale
Vegetables
- 1 lb. green beans, fresh, trimmed
- 1 ½ lbs. Yukon gold potatoes, baby, cut in half
Meat
- 12 oz bacon, thick cut
Seasonings & Fats
- 4 tbsp butter
- 2 ½ tbsp ranch seasoning
- 1 tsp garlic powder
- salt and pepper, to taste
Instructions
- Boil green beans: Bring a medium pot of water to a boil, add the green beans and cook until bright green and tender, about 5 minutes. Remove with a slotted spoon and place in ice water to stop cooking.
- Cook potatoes: After removing the green beans, add the potatoes to the boiling water and cook until fork tender, about 10 minutes. Drain carefully once done.
- Cook bacon: While potatoes cook, heat a large skillet over medium-high heat and cook bacon pieces until browned and crispy, then remove with a slotted spoon and set aside on a paper towel-lined plate.
- Brown potatoes: Add the drained potatoes to the skillet with bacon drippings. Stir frequently, browning the potatoes evenly on all sides over medium-high heat.
- Combine and season: Reduce heat to medium, add butter, green beans, ranch seasoning, and garlic powder. Stir well to coat everything evenly.
- Finish with bacon and seasoning: Add the cooked bacon back into the skillet and season with salt and pepper to taste. Stir gently, then serve hot and enjoy your side dish.
Notes
- Use baby Yukon gold potatoes for a creamy texture and quick cooking.
- To reduce sodium, use low-sodium bacon and adjust seasoning accordingly.
- If ranch seasoning is unavailable, substitute with a mix of dried dill, parsley, and onion powder.
- Blanch green beans briefly in boiling water then ice water to keep their vibrant color and crispness.
- For a dairy-free version, substitute butter with olive oil or a plant-based alternative.
