Instructions

  1. Prepare the base: Melt the butter in a large skillet over medium heat. Add the diced shallots, sea salt, and several grinds of black pepper. Cook for 4 minutes, stirring occasionally, until the shallots are softened.
  2. Add garlic and flour: Stir in the grated garlic cloves, followed by the all-purpose flour, mixing well to combine and cook for about 1 minute to remove the raw flour taste.
  3. Create the cream sauce: Pour in the heavy cream and reduce the heat to low. Allow the mixture to simmer gently, stirring occasionally, for 5 to 10 minutes, until the cream thickens sufficiently to coat the back of a spoon.
  4. Melt the cheese: Add the freshly grated Parmesan cheese to the cream sauce and stir until the cheese is completely melted and integrated, creating a smooth and creamy consistency.
  5. Cook the spinach: Add the fresh spinach to the skillet and cook, stirring frequently, just until the spinach wilts. The sauce will thin slightly from the moisture released by the spinach.
  6. Thicken the sauce: Continue cooking the mixture for an additional 2 to 3 minutes, stirring occasionally, allowing the sauce to thicken again.
  7. Finish and season: Stir in the fresh lemon juice and adjust seasoning by adding more salt or pepper as needed. Serve warm as a delicious side dish.
