This traditional Irish mashed potatoes recipe, known as Champ, features fluffy mashed potatoes blended with tender green onions and creamy butter, creating a comforting and flavorful side dish perfect for any meal.

- 1/4 cup whole milk (50 ml)
- 6-8 green onions, green parts only, sliced
- 1/2 cup unsalted butter (100 g)
- Salt to taste

Instructions
- Infuse the Milk Pour the whole milk into a small saucepan and add the sliced green onions. Heat gently over low heat until the milk just starts to boil. Remove from heat and let the green onions infuse for a few minutes to release their flavor.
- Cook the Potatoes Peel the potatoes and quarter them evenly. Place the potatoes in a large pot of salted water and bring to a boil. Cook until the potatoes are very tender, about 15 minutes.
- Drain and Dry Potatoes Drain the potatoes thoroughly and return them to the hot pot. Allow them to steam dry for 2-3 minutes to evaporate excess moisture.
- Mash Potatoes Pour the hot infused milk through a strainer to remove the green onions, reserving the milk. Mash the potatoes until smooth then gradually add the infused milk and butter. Continue mashing until the mixture is creamy and smooth.
- Season Add salt and white pepper to taste. Stir well to combine all flavors. Serve immediately, optionally garnished with extra sliced green onions and a pat of butter.
Notes
- Use starchy or floury potatoes such as Yukon Gold, Russet, Maris Piper, King Edward, Vivaldi, or Desiree for the best fluffy texture.
- For a richer flavor, you can substitute half and half or cream for the whole milk.
- Adjust the amount of green onions to your preference for a milder or stronger onion flavor.
- Use unsalted butter to control salt levels in the dish.
- If you don't have white pepper, use freshly ground black pepper as a substitute.
- Champ can be served as a side dish to meats, vegetables, or as a comforting main accompaniment.
