Description

This Crockpot Chicken and Stuffing recipe combines tender, slow-cooked whole chicken with flavorful vegetables and savory stuffing, all made conveniently in a slow cooker. Perfect for a comforting family meal with minimal hands-on time.

Ingredients

Scale

Vegetables

  • 2 medium carrots diced
  • 1 small yellow onion diced
  • 2 medium celery ribs diced

Chicken and Seasonings

  • 5 pounds whole chicken
  • 1/2 cup salted butter melted
  • 1 teaspoon poultry seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste

Stuffing

  • 6 ounces box stove top stuffing any flavor

Instructions

  1. Prepare the vegetables and chicken: Add the diced carrots, onion, and celery to the bottom of the slow cooker. Clean out the inside of the whole chicken and discard the insides, then place the chicken on top of the vegetables.
  2. Season the chicken: Pour the melted salted butter evenly over the chicken. Sprinkle the poultry seasoning and paprika on top, then rub all seasonings thoroughly over the chicken. Optionally, add salt and pepper to taste.
  3. Cook the chicken: Place the lid on the slow cooker and cook on high for 6 hours until the chicken is fully cooked and tender.
  4. Prepare the stuffing: Carefully remove the chicken and place it on a platter, covering with foil to keep warm. Drain all of the liquid in the slow cooker except for 1.5 cups, leaving the cooked vegetables in the pot.
  5. Cook the stuffing: Add the box of stove top stuffing mix to the slow cooker and stir well to combine with the reserved liquid and vegetables. Replace the lid and cook on high for an additional 10 minutes.
  6. Finish and serve: Fluff the stuffing with a fork once cooked. Slice the chicken as desired, serve alongside the stuffing, or place the sliced chicken back into the slow cooker for a nice presentation. Enjoy your meal!

Notes

  • Use any flavor of stove top stuffing for variation in taste.
  • For extra crispy skin, you can brown the whole chicken in a hot skillet before placing it in the slow cooker.
  • Adjust seasonings to your preference, especially salt and pepper.
  • Leftover chicken can be used in sandwiches or salads.
  • Make sure the internal temperature of the chicken reaches 165°F to ensure it is fully cooked.
