Filling

  • 8 oz cream cheese softened
  • 3 cloves garlic minced
  • 3 tbsp minced parsley
  • 3 tbsp chopped chives
  • 2 tbsp chopped dill
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper

  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 425°F and grease a 9×13 inch baking dish to prevent sticking.
  2. Prepare Filling: In a mixing bowl, combine the softened cream cheese, minced garlic, parsley, chives, dill, grated parmesan, salt, and black pepper. Mix well with a rubber spatula until fully blended.
  3. Prepare Chicken: Lay each chicken breast flat on a cutting board. Using a sharp knife held parallel to the board, cut a slit about 3/4 through each breast to create a pocket. Season the inside of each pocket with salt and pepper.
  4. Stuff Chicken: Scoop a quarter of the cream cheese filling into the bottom portion of each slit chicken breast. Spread it evenly, then fold the top flap over the filling to enclose it.
  5. Coat with Breadcrumbs: On a plate, mix panko breadcrumbs, garlic powder, paprika, salt, and pepper. Press both the top and bottom of each stuffed chicken breast into the breadcrumb mixture to coat completely.
  6. Bake: Place the coated chicken breasts in the prepared baking dish. Lightly spray the outside of the chicken with olive oil spray. Bake in the preheated oven for 35 minutes or until the chicken's internal temperature reaches 165°F and the exterior is golden brown.

  • Make sure the cream cheese is softened to room temperature for easy mixing.
