Garlic Parmesan Butter

  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • ¼ cup fresh parsley, finely chopped, optional, for serving

Chicken Skewers

  • 3 pounds boneless, skinless chicken thighs, cut into 2-inch strips
  • 2 teaspoons salt
  • ½ teaspoon black pepper


Instructions

  1. Prepare the Garlic Parmesan Butter: Melt the butter in a medium-sized bowl. Add the grated garlic, parmesan cheese, lemon zest, lemon juice, salt, and red pepper flakes. Stir until fully combined. Note that the butter sauce may firm up while preparing the recipe, which is normal.
  2. Trim the Skewers: Trim wooden skewers so they fit inside your air fryer basket. Use heavy-duty poultry shears for a clean cut. Alternatively, metal skewers that fit your air fryer can be used.
  3. Assemble the Chicken Skewers: Thread 6-7 pieces of chicken thigh strips tightly onto each skewer. Season all sides of the skewers with salt and black pepper evenly.
  4. Coat the Skewers with Butter: Using a basting brush, generously brush all sides of each chicken skewer with the prepared garlic parmesan butter.
  5. Air Fry the Chicken: Place the skewers in the air fryer at 350°F. Cook for 5 minutes, then pause to baste with more garlic parmesan butter. Cook another 5 minutes, baste again, and cook for a final 5 minutes. The total cook time is 15 minutes, and the chicken should be golden brown.
  6. Serve: After cooking all batches, pour the accumulated garlic parmesan butter from the air fryer over the cooked chicken skewers. Garnish with freshly chopped parsley and serve with lemon wedges for a bright finishing touch. Enjoy!
