Instructions
- Prepare the Tomato Topping: In a medium bowl, combine diced tomatoes, minced garlic, olive oil, balsamic vinegar, chopped basil, salt, and black pepper. Stir well and set aside to let flavors meld.
- Prepare the Chicken: If desired, pound the chicken breasts to an even thickness for uniform cooking. Coat each chicken breast with olive oil to help the seasoning adhere and to promote even grilling.
