Tomato Basil Topping

  • 1 head garlic, minced
  • 1 1/2 tablespoon olive oil

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Chicken

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices mozzarella cheese
  • 4-5 tablespoons balsamic glaze

Instructions

  1. Prepare the Tomato Topping: In a medium bowl, combine diced tomatoes, minced garlic, olive oil, balsamic vinegar, chopped basil, salt, and black pepper. Stir well and set aside to let flavors meld.
  2. Prepare the Chicken: If desired, pound the chicken breasts to an even thickness for uniform cooking. Coat each chicken breast with olive oil to help the seasoning adhere and to promote even grilling.
  3. Season the Chicken: In a small bowl, mix Italian seasoning, garlic powder, salt, and black pepper. Evenly coat each chicken breast with this seasoning blend to infuse flavor.
  4. Grill the Chicken: Preheat the grill to high heat. Grill the chicken breasts for 8 minutes on each side or until fully cooked through and the internal temperature reaches at least 165°F (75°C).
  5. Add Cheese: When the chicken is cooked, top each breast with a slice of mozzarella cheese. Close the grill lid or cover the chicken to allow the cheese to melt, which should take about 2 minutes.
