Description

These 3-Ingredient Holiday Cheese Truffles are a festive and easy appetizer featuring creamy herbed cheese rolled in crunchy pistachios and sweet dried cranberries, perfect for holiday gatherings or special occasions.

  • 13 ounces Alouette Garlic & Herbs Soft Spreadable Cheese (or herbed cream cheese or herbed goat cheese)

Coating

  • 1/3 cup roasted pistachios, finely chopped
  • 1/2 cup dried cranberries, finely chopped

Optional Garnish

  • Rosemary sprigs for garnish


Instructions

  1. Prepare the surface: Line a large plate with parchment paper to prevent sticking and for easy cleanup.
  2. Scoop the cheese: Use a 1-ounce cookie scoop (2 tablespoons) to scoop out balls of cheese and place them evenly spaced on the prepared plate.
  3. Freeze the cheese balls: Place the plate in the freezer for 20 minutes to firm up the cheese balls, making them easier to roll.
  4. Prepare coatings: Spread the chopped pistachios on one small plate and the chopped dried cranberries on another small plate or shallow bowl.
  5. Roll the cheese balls: Remove the cheese balls from the freezer and use your hands to roll each into a smooth, round ball.
  6. Coat the truffles: Roll half of the cheese balls in the chopped pistachios and the other half in the chopped dried cranberries until fully coated.
  7. Serve or store: Arrange the truffles on a serving platter and optionally garnish with rosemary sprigs around the edges. Enjoy immediately or refrigerate until ready to serve.
