- 1/3 cup roasted pistachios, finely chopped
- 1/2 cup dried cranberries, finely chopped

Instructions
- Prepare the surface: Line a large plate with parchment paper to prevent sticking and for easy cleanup.
- Scoop the cheese: Use a 1-ounce cookie scoop (2 tablespoons) to scoop out balls of cheese and place them evenly spaced on the prepared plate.
- Freeze the cheese balls: Place the plate in the freezer for 20 minutes to firm up the cheese balls, making them easier to roll.
- Prepare coatings: Spread the chopped pistachios on one small plate and the chopped dried cranberries on another small plate or shallow bowl.
- Roll the cheese balls: Remove the cheese balls from the freezer and use your hands to roll each into a smooth, round ball.
- Coat the truffles: Roll half of the cheese balls in the chopped pistachios and the other half in the chopped dried cranberries until fully coated.
- Serve or store: Arrange the truffles on a serving platter and optionally garnish with rosemary sprigs around the edges. Enjoy immediately or refrigerate until ready to serve.
