Description

Honey Garlic Chicken Skewers feature tender pieces of marinated chicken cooked on a BBQ or griddle, delivering a perfect balance of sweet and smoky flavors. Easy to prepare and delicious, they make a great main course for dinner or a BBQ gathering.

Marinade

  • 1 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 2 cloves garlic peeled and minced
  • 1 tsp minced ginger
  • 3 tbsp dark soy sauce
  • 3 tbsp honey

Skewers

  • 2 chicken breasts (approx 350g/12.5 oz) chopped into bite sized pieces
  • 1 red bell pepper chopped into large chunks
  • 1 onion peeled and sliced into squares
  • 1 tbsp sesame seeds
  • small bunch of coriander/cilantro roughly torn


Instructions

  1. Prepare the marinade: In a small bowl, combine 1 tbsp vegetable oil, 1 tbsp sesame oil, 2 cloves minced garlic, 1 tsp minced ginger, 3 tbsp dark soy sauce, and 3 tbsp honey. Mix well to create the marinade.
  2. Marinate the chicken: Place the chopped chicken breasts in a bowl and pour in three-quarters of the marinade, reserving the rest for brushing during cooking. Cover and refrigerate for 1 hour to allow flavors to penetrate the meat.
  3. Prepare the skewers: If using wooden skewers, soak them in water to prevent burning. Preheat your BBQ or griddle until very hot. Thread chicken pieces alternately with chunks of red bell pepper and onion slices onto the skewers, discarding any leftover marinade in the bowl.
  4. Cook the skewers: Place the skewers on the hot BBQ or griddle. Cook for 8 to 10 minutes, turning 3 to 4 times to ensure even cooking. Halfway through cooking, brush the skewers with the reserved marinade. Check that the chicken is cooked through by slicing the largest piece to ensure no pink remains in the center.
  5. Garnish and serve: Sprinkle cooked skewers with sesame seeds and torn coriander leaves. Serve hot with a side of salad, rice, or potatoes for a complete meal.

Notes

  • You can marinate the chicken up to a day ahead, but avoid cooking it in advance and reheating to prevent dryness.
  • Cooked chicken kebabs can be cooled and served cold as part of a salad or wrap.
  • Replace onion and bell pepper with mushrooms, red onion, courgette chunks, or pineapple for variety.
  • Add sriracha, chili powder, or chili flakes to the marinade for a spicy flavor kick.
