Honey Ginger Simple Syrup
- 1/3 cup honey
- 1 cup water
- 1 medium piece of fresh ginger, peeled and sliced
Lemonade
- 1 1/2 cups freshly squeezed lemon juice (Meyer lemons recommended)
- 4 cups water
- Fresh mint leaves
Instructions
- Make the honey ginger simple syrup: In a small pot or tea kettle, bring 1 cup of water to a boil. Once boiling, turn off the heat and add the honey and sliced ginger. Let the mixture steep for 20 minutes to infuse the flavors.
- Prepare the lemonade base: While the simple syrup is steeping, juice the lemons and pour the lemon juice into a large pitcher. Add 4 cups of water and ice to the pitcher.
- Combine and strain: After steeping, strain out the ginger slices from the honey-ginger syrup. Add the syrup to the lemon water mixture in the pitcher and stir well to combine.
- Add mint and serve: Add fresh mint leaves to the lemonade. Refrigerate until chilled or serve immediately over ice for a refreshing drink.
Notes
- You can adjust the sweetness by adding more or less honey to the syrup according to your taste.
- For a stronger ginger flavor, allow the ginger to steep for longer than 20 minutes.
- Substitute Meyer lemons with regular lemons if not available, keeping the same quantity.
- For a sparkling version, replace still water with sparkling water just before serving.
- Keep the honey ginger syrup refrigerated and use within a week for best freshness.
