Description

Honey Ginger Simple Syrup

  • 1/3 cup honey
  • 1 cup water
  • 1 medium piece of fresh ginger, peeled and sliced

Lemonade

  • 1 1/2 cups freshly squeezed lemon juice (Meyer lemons recommended)
  • 4 cups water
  • Fresh mint leaves


Instructions

  1. Make the honey ginger simple syrup: In a small pot or tea kettle, bring 1 cup of water to a boil. Once boiling, turn off the heat and add the honey and sliced ginger. Let the mixture steep for 20 minutes to infuse the flavors.
  2. Prepare the lemonade base: While the simple syrup is steeping, juice the lemons and pour the lemon juice into a large pitcher. Add 4 cups of water and ice to the pitcher.
  3. Combine and strain: After steeping, strain out the ginger slices from the honey-ginger syrup. Add the syrup to the lemon water mixture in the pitcher and stir well to combine.
  4. Add mint and serve: Add fresh mint leaves to the lemonade. Refrigerate until chilled or serve immediately over ice for a refreshing drink.

Notes

  • You can adjust the sweetness by adding more or less honey to the syrup according to your taste.
  • For a stronger ginger flavor, allow the ginger to steep for longer than 20 minutes.
  • Substitute Meyer lemons with regular lemons if not available, keeping the same quantity.
  • For a sparkling version, replace still water with sparkling water just before serving.
  • Keep the honey ginger syrup refrigerated and use within a week for best freshness.
