- 12 egg roll wrappers

Filling
- 500 grams corned beef (approximately 10 slices)
- 1/2 cup Swiss cheese (or mozzarella cheese, approximately 5 slices)
- 1/2 cup sauerkraut
Instructions
- Prepare the filling: Dice the corned beef into bite-sized pieces. Dice the Swiss cheese or mozzarella cheese into bite-sized pieces or shred it. In a medium-sized bowl, combine the corned beef, cheese, and sauerkraut, mixing until evenly combined.
- Assemble the egg rolls: Place 1 to 2 tablespoons of filling in the center of each egg roll wrapper. Dip your finger in water and wet the edges of the wrapper. Fold in two opposite corners to the center, then tightly roll up to enclose the filling. Repeat with remaining wrappers.
- Air Fry method: Brush both sides of the egg rolls with oil. Air fry at 400°F for 10 minutes or until golden brown and crispy, flipping halfway if needed.
- Stovetop frying method: Heat a deep pot with oil over medium heat. Fry the egg rolls in small batches for 5 minutes or until golden brown. Drain on paper towels.
- Oven baking method: Brush the egg rolls with oil on both sides. Place on a sheet pan lined with tin foil or on a baking rack. Bake at 400°F for 15 minutes, flipping halfway through and brushing with more oil as needed, until golden and crispy.
- Cool and serve: Allow the cooked egg rolls to cool for 2 to 3 minutes to let the filling set as it will be very hot. Serve with Thousand Island dressing for dipping and enjoy!
