Description

This Air Fryer Chicken Burrito Bowl recipe features tender, flavorful chicken thighs marinated in chipotle peppers, ancho chile powder, cumin, and oregano, cooked to perfection in an air fryer. Served over rice with black beans, shredded lettuce, sliced avocado, and salsa, it's a quick and delicious meal packed with bold Mexican-inspired flavors.

Ingredients

Scale

Chicken Marinade

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 1/4 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 3 garlic cloves minced
  • 1/2 tablespoon chipotle peppers in adobo sauce
  • 1/2 teaspoon ancho chile powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon olive oil
  • 1 lime, juiced

For Serving

  • Rice, for serving (about 3 cups cooked)
  • Black beans, for serving (about 1 1/2 cups cooked or canned, rinsed)
  • Shredded lettuce, for serving
  • Avocado, sliced, for serving (1 medium avocado)
  • Salsa, for serving (about 1/2 cup)

Instructions

  1. Prepare Marinade: In a large bowl, combine the chicken thighs with kosher salt, black pepper, minced garlic, chipotle peppers in adobo sauce, ancho chile powder, ground cumin, dried oregano, and olive oil. Toss thoroughly to evenly coat the chicken pieces with all the seasonings.
  2. Preheat Air Fryer: Place the crisper plate into the COSORI air fryer basket. Use the preheat function to heat the air fryer to 385 degrees Fahrenheit, then pause and prepare the chicken for cooking.
  3. Cook Chicken: Arrange the marinated chicken thighs in a single layer on the preheated crisper plate. Select the air fryer setting, set the timer to 16 minutes, and start cooking until the chicken is cooked through and nicely browned.
  4. Rest and Slice: Once cooked, remove the chicken from the air fryer and immediately squeeze the juice of one lime over the pieces. Let the chicken rest for 5 minutes to allow juices to redistribute, then slice into bite-sized strips.
  5. Assemble Burrito Bowls: Serve the sliced chipotle chicken over cooked rice and black beans in individual bowls. Top with shredded lettuce, sliced avocado, and a generous scoop of salsa for a complete and satisfying meal.

Notes

  • Adjust the amount of chipotle peppers and ancho chile powder based on your preferred spice level.
  • Use boneless, skinless chicken thighs for juicier meat; chicken breasts can be substituted but may be less tender.
  • For a quicker option, use pre-cooked rice and canned black beans.
  • Garnish with fresh cilantro, shredded cheese, or a dollop of sour cream for extra flavor.
  • Ensure the air fryer is properly preheated to achieve the best texture on the chicken.
