Steak Bites

  • 2 - 14 oz strip steaks

Cajun Seasoning

  • 2 tbsp kosher salt
  • 2 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp cayenne powder
  • 1 tbsp red pepper flake
  • 1 tbsp fine ground black pepper
  • 1 tbsp white pepper
  • 1 ½ tbsp oregano
  • 2 tsp hot paprika


Instructions

  1. Slice the steak: Cut the strip steaks into roughly 3/4-inch size pieces to ensure quick and even cooking.
  2. Prepare seasoning: In a small bowl, mix all the Cajun seasoning ingredients thoroughly to combine the spices evenly.
  3. Season the steak bites: Place the steak pieces into a mixing bowl, toss with 1 tablespoon of avocado oil until coated, then add 2 tablespoons of the Cajun seasoning and mix well to evenly season all the steak pieces. Set aside.
  4. Sear the steak bites: Heat 1 tablespoon of avocado oil in a large skillet over high heat until shimmering and starting to smoke. Add the steak bites, turning often to sear all sides for a total of 3 minutes. Remove steak and place on a plate. Reduce heat to low and let pan cool for 2 minutes.
  5. Cook garlic and jalapeños: Add 4 tablespoons of unsalted butter to the pan and allow it to melt. Add the minced garlic and use a wooden turner to scrape up all crispy bits from the pan bottom. Add sliced jalapeños and cook until fragrant, about 2 minutes.
  6. Combine steak with sauce: Return steak bites to the pan, stirring to coat them thoroughly in the buttery garlic sauce with jalapeños.
  7. Serve: Plate the steak bites and pour the remaining butter sauce over them for an extra burst of flavor.
