Other Ingredients
- Dill pickle slices
- Sliced red onion
Instructions
- Preheat and Prepare Sweet Potatoes: Preheat your oven to 425° F and line a baking sheet with foil or parchment paper for easy cleanup.
- Coat Sweet Potatoes: Place the sweet potato cubes on the baking sheet and drizzle them with avocado oil, chili powder, garlic powder, salt, and freshly ground black pepper. Toss with your hands until evenly coated with oil and spices.
- Roast Sweet Potatoes: Roast the sweet potatoes for 30 minutes, tossing halfway through, until they are tender and slightly caramelized.
- Cook Sloppy Joe Meat: While the sweet potatoes roast, heat a large skillet over medium-high heat. Add a little oil, then add the ground beef and diced yellow onion. Crumble the beef and cook until browned and the onions are tender.
- Add Spices and Sauce: Stir in chili powder, dried mustard, celery seed, garlic powder, salt, and pepper. Pour in tomato sauce, ketchup, Worcestershire sauce, and honey, stirring until everything is well coated.
- Simmer Meat Mixture: Reduce heat to medium-low and let the sloppy joe mixture simmer for 15 minutes, stirring occasionally, until the sauce thickens.
- Assemble Bowls: Divide the roasted sweet potatoes and sloppy joe mixture evenly into bowls. Top with dill pickle slices and sliced red onions or your preferred toppings. Serve immediately.
Notes
- For a spicier kick, add a pinch of cayenne pepper or hot sauce to the meat mixture.
- You can substitute ground turkey or chicken for a leaner option.
- If you prefer, use yellow mustard instead of dried mustard for a tangier flavor.
- Roasting sweet potatoes evenly ensures they are tender; cut cubes uniformly.
- Leftover sloppy joe mixture can be stored in the refrigerator for up to 3 days.
