Instructions

  1. Brew Espresso: Brew 3 tablespoons of espresso coffee and allow it to cool completely before use to avoid melting the mascarpone in the mixture.
  2. Crush Ladyfingers: Place the savoiardi biscuits in a blender or food processor and blitz until they reach a fine powder consistency, resembling cookie crumbs.
  3. Prepare Cream Mixture: In a mixing bowl, combine the mascarpone cheese and sifted powdered sugar. Add the cooled espresso coffee and mix until a smooth cream mixture forms.
  4. Combine Ingredients: Add the crushed ladyfingers into the cream mixture and use a rubber spatula to fold everything together until well combined. The result will be a thick, cookie dough-like batter.
  5. Form Truffles: Using a teaspoon, scoop out portions of the mixture and roll them between your fingers to form balls. Place each ball on a plate. You should get about 10 truffle balls.
